Bobotie: Typical South African Cuisine

Bobotie came to South Africa via Malaysia, and is a sort of savory bread custard with lots of ground lamb (or beef), curry, fruit and nuts.  Very yummy!  Make sure the ground meat you use is very, very lean.

Ingredients:

2 oz butter
1 cup onions, thinly sliced
1 apple, peeled and diced
1/2 cup raisins
2 tbsps slivered almonds
2 tbsps lemon juice
2 pounds ground lamb or beef
2 slices of bread soaked in milk
1/2 teaspoon turmeric
1 egg
2 tbsps curry powder
6 bay leaves
1/2 cup whole milk

Directions:

  1. Melt the butter in a saucepan.  Add the onions and saute for 5 minutes, then add the diced apple and cook for another minute.
  2. Add the ground meat, cook, and combine.
  3. Squeeze out the excess milk from the bread slices, then tear up and add to pot.
  4. Add the curry powder, raisins, almonds, lemon juice, turmeric and stir well.

Place mixture in a greased 9 x 13″ baking dish.  Place bay leaves on top of casserole.  Bake at 325 degrees F for 40 minutes, then remove from oven.

Mix together the egg and milk, pour it over the casserole.  Bake for 15 more minutes.
